So you went Paleo a few months ago and now you're running out of ways to cook meat? Say it ain't so!! Big Daddy could eat steak and chicken thighs for breakfast, lunch, and dinner. I need a little more spice in my life.
Luckily, Everyday Paleo came to my rescue with this amazingly simple, amazingly tasty, amazingly amazing recipe for the roast I had defrosting in my fridge.
A little bit of coffee, a little bit of cinnamon, a little bit of cocoa? And cumin? I honestly cannot read a recipe and imagine what its going to taste like, but I *almost* skipped over this one. I'm so glad I didn't! This hunk of meat gave off different aromas every 15 minutes and each one of them was amazing. The cumin threw me off a little bit, especially after the coffee. The roast was moist and tender and didn't taste like a boring, old roast. It also didn't taste like coffee, cinnamon, cocoa, or cumin. The meat and the spices created a new flavor that was... amazing. I usually like to dip my roast in ketchup (because it's usually too dry to swallow without the ketchup!!) but I felt like the ketchup ruined the flavor.
I served this with a simple garden salad. I didn't want to have any strong flavors competing with the flavor of the main dish. Or... I put this in the crockpot at 9am and completely forgot about dinner until Big Daddy walked in the door!
